Stuffed Jacket Potato

4 – 6 nice baking potatoes

2 onions diced

50g butter

2/3 tbs of vegan cheese

2tbs nutritional yeast

50ml soy cream

salt and pepper

1 Tbs of chopped chives

Filling options or whatever takes your fancy

1. 100g wilted spinach

2. Baked beans

3. leek, cherry tomato, onion and basil topping

Topping (optional)

Breadcrumbs tossed in oil mixed with cheese


First pre heat the oven to 200C then prick the potatoes with a fork a few times rub some oil over each potato and then sprinkle on some rock salt (this will help give a crisp skin if desired) place in the oven on a tray and bake for 20mins then turn the oven down to 170 for 45 to 60 mins. Turn every 15 mins

While the potatoes are baking prepare the veg filling fry some onion, leek and cherry tomatoes and wilt some spinach

When the potato is cook let them cool for a few mins then cut in half and scoop out the potato into a bowl leaving the skin in tact. Mash the potato until fairly smooth.

In a pan melt the butter then add chopped onion, leek gently fry for about 3mins until tender then add cream and nutritional yeast, salt and pepper to taste, grated cheese and chives now combine the mixture to the potatoes and mix well season again if needed.

Place some spinach or tomato mix in the bottom of a potato skin then top up with the potato mixture repeat until all gone.

Top with cheesy breadcrumbs optional and bake in oven for about 15 mins

My kids love them with beans and of course more tomato sauce
