Green lentil and vegetable dal

250g green lentils

2 sticks celery (diced)

2 carrots (diced)

2 onion (diced)

cauliflower cut into small florets

1 small sweet potato

1tsp fresh ginger

Fresh chilli

1 lime zest and juice


2 tsp vege seasoning

2 tsp turmeric

2 tsp cumin seeds

2 tsp garam masala

6 cardamom seeds

2tbls flour mixed with water

1 tbsp chopped coriander

salt and pepper

olive oil for frying


  • 2 tbs coconut

  • 100ml coconut milk

  • Soak lentils over night

  • Heat oil and lightly fry diced onion, carrot and celery for a minute place the lid on a cook for a minute or two. then add the diced sweet potato, soaked lentils, cardamom, ginger, garam masala, turmeric, cumin and chilli cover with water by 3cm then bring to boil and simmer for about 20 mins.

  • Next add the small cauliflower florets optional coconut and coconut milk and stir in 2 tbs flour mixed with 6 tbs of water to thicken. Add vegi seasoning Cook for a few more minutes then remove from the heat.

  • Taste and season with salt and pepper. Add zest and juice of one lime and finish with tbs of freshly chopped coriander.

  • Serve on a bed of rice and a sprinkle of coriander and fragrant lime zest.
